Reduced-sugar fruit juices – specific processing aids authorised in the yeast fermentation process
This initiative is necessary to give manufactures and consumers legal clarity on what processing aids may be used to produce reduced-sugar fruit juices.
The authorised processing aids are essential in the yeast fermentation process and are used for nutrition, hydration, pH control and antifoaming purposes.
Directive 2001/112/EC (the Fruit Juice Directive) will be amended to specify the authorised processing aids in Annex I, Part II, Point 3.
